Sweet Red Pepper Buttery Omelette

An omelette cooked in butter with sweet red pepper, red onion, courgette, and mushrooms folded in.

Ingredients

Extra Virgin Olive Oil
40 g
Red Onion (Diced)
80 g
Red Bell Pepper (Diced)
80 g
Courgette (Diced)
40 g
Mushroom (Diced)
2 ds
Sea Salt
2 ds
Black Pepper
1⁄2 t
Dill, dried
1⁄4 t
Onion powder
2
Egg
5 g
Butter, unsalted

Instructions

  1. Heat a frying pan and add the olive oil and chopped onion. Turn the pan down to a medium/low heat. Then chop the red pepper and add it to the pan, followed by the courgette and then the mushrooms.
  2. Season well with sea salt, ground black pepper, dill, and onion powder. Give it a stir.
  3. In a bowl, crack the eggs and season with salt and pepper, and whisk well.
  4. Now that the vegetables are cooked, pull them to one side of the pan and add the nob of butter to this space. Next, pour the eggs into the butter and gently stir. Once the eggs begin to set, move your vegetables on top and begin to fold the omelette in and over. Finish cooking the eggs and serve.
