This deliciously sweet and tangy chutney preserves pumpkin and apple by combining apple cider vinegar and sugar with pumpkin spice.

Ingredients

500 g
Pumpkin (Squash cubed)
250 g
Apple (Cubed)
100 g
Red Onion (Chopped )
1 T
Pumpkin spice
50 g
Ginger root (Chopped )
6 g
Garlic (Chopped)
10 ml
Extra Virgin Olive Oil
150 ml
Cider Vinegar
1 1⁄2 t
Wholegrain Mustard
200 g
Sugar

Instructions

  1. Prepare by chopping up the onion, garlic, ginger, pumpkin, and apples into small pieces.
  2. In a large pan, warm the extra virgin olive oil and add the onion. Cook until caramelised.
  3. Then add the pumpkin spice and cook for 1 mins. Followed by stirring in the garlic and ginger for 1 min.
  4. Place the pumpkin and apples in the pan and cook for 5 mins.
  5. Pour the cider vinegar over the pumpkin and apples. Stir in the mustard and simmer until the pumpkin and apples soften. Keep stirring at regular intervals for 45 mins.
  6. Then add the sugar. Stir well and cook until the chutney looks soft and saucy. It will thicken once cooled. Finally, place the chutney in an airtight jar and leave to cool in a cool dark place.  Once cooled store in the fridge. Will keep for six months.
