Creamy Cocoa & Coconut Ganache

Silky smooth chocolate pudding combining creamed coconut and cocoa with honey.

Ingredients

20 g
Creamed Coconut
80 g
Water (Or 100g canned coconut milk to replace creamed coconut and water.)
1
Gelatin sheet
40 g
Honey
10 g
Cocoa powder
200 g
Fromage Frais (Use natural semi-skimmed or skimmed without added sugar)

Instructions

  1. In a saucepan on a low heat, add the creamed coconut and water and then whisk.
  2. Once the coconut and water begin to combine, add the gelatin and whisk until dissolved.
  3. Remove from the heat and add the honey and cocoa powder and whisk again.
  4. Now, add the fromage frais to the pan and give it a good whisk until smooth.
  5. Finally, pour the mixture into ramekins and place into the fridge to set.

Serve with grated dark chocolate.
